Healthy-light Chocolate cake
Ingredients
¾ cup honey
½ cup carrot juice (fresh)
1 seedless orange (peel and slice - keep skin)
1 seedless grapefruit (peel and slice)
300 gm coco powder
125gm grounded almonds
2 drops of almond essence
Pinch of cinnamon
Pinch of mixed spices (optional)
3 large eggs (separated)
Pinch of bicarbonate soda
Method
Prepare oven 170 degrees – baking tin (20-25cm) greased and lightly dusted with flour.
Put the orange slices and skin, grapefruit slices and juice into a sauce pan, add 200 ml bowling water and simmer on medium to low heat for 1hr 10 minutes. Then leave to cool down. Pour the cooked orange and grapefruit into a food processor and puree. Add egg yolks and all other remaining ingredients and whizz thoroughly. Beat egg whites until slightly it is stiff, and then fold it into the grapefruity-orangey chocolate mixture. Pour the mixture into a baking tin and bake for 1 hour.
Allow cake to cool then serve with your choice of light cream or custard.
